These creative little sammies are a unique and yummy twist on regular old grilled cheese. It’s still darn easy to make but adds a bit of protein and looks really cute in a photo šŸ˜‰ You could use any type of cheese you like for these since eggs are the perfect blank canvas; I’d love to make them again with pepper jack for a spicy kick! These would make a perfect brunch dish because they’re half breakfast, half lunch, all yummy.

When I first saw this recipe I thought it was magic. How can you make an egg inside a grilled cheese without a disaster? The answer: a two-step process. Yep. You fry the eggs first, then slap them on top of the first bread and cheese, top with more cheese and another slice of bread and make it like a normal grilled cheese sandwich. The grilling heats the egg back up and the gooey cheese traps it inside the sandwich so it doesn’t fall out.

Advice: cook your eggs for a little less time than you normally like them. They will get harder in the sandwich-making process.
