If you want a deliciously creative chicken dish for a weeknight dinner, this is for you! It takes boring old chicken breast and transforms it into something fun. The best part is that it doesn’t take much effort to prepare, so it’s perfect for busy nights. Pop the chicken in the oven with the cheese and broccoli on top and cook the bacon to your liking in the mean time. Then just crumble the bacon on top when the chicken is done and you have a complete dish! The original recipe calls for cheddar cheese which would go great with the broccoli because of its sharp taste. However, the mozzarella was delicious too because it added a creamy flavor that isn’t too strong so the bacon and broccoli can really shine.
Choosing a side to serve with this recipe was kind of hard, though. I chose quinoa because it gave us a grain that added some extra protein and wasn’t all carb-heavy. There is already broccoli in the dish so I didn’t want to make more to go with it, though that probably would have been the best idea. It has some veggies but not enough; what a conundrum! Regardless, this dish was so tasty I’ll definitely prepare it again the next time I have bacon kicking around in my fridge.
