Clean the Fridge Salad with Garlic Ciabatta

Baby spinach, chicken breast, carrots, sun-dried tomatoes, feta cheese, sunflower kernels

 

Sometimes you just have so many random ingredients in your house that you need to throw them together and make a dinner creation. That’s what happened this night. We were planning to go out with friends so I wanted to make something that would keep us full for hours, was nutritious, and could be prepared quickly.

This salad was actually amazing! The creamy cheese was a nice foil against the acidic tomatoes and sweet carrots. I’d never eaten seeds on a salad before, but the sunflower kernels provided a nice crunch. I also had some leftover mini ciabatta rolls so I made them into makeshift garlic bread and that satisfied my carb craving.

This was one of the easiest, tastiest meals I’ve made, plus it got rid of a lot of half-used ingredients. Yum yum!
