Maple Bacon Butternut Squash Soup

This recipe looks kind of gross and sounds weird but guys, it is so GOOD. The sweetness of the maple and butternut squash couldn’t provide a better contrast to the smoky, salty bacon. I usually don’t like sweet flavors with meat but this was so delicious! This soup is not super duper healthy so save it for a cheat day treat.
If you want a soup that’s super easy to make, this fits that bill, too. Just put the chopped squash and strips of bacon on a cookie sheet, drizzle with maple syrup, and bake for awhile. Then break up the squash in a blender, add broth and chopped up bacon, and serve! It isn’t the most photogenic soup I’ve ever made but who cares? You’ll eat the entire batch so fast you’ll hardly have time to look at it 😉
Pro tip: For the love of God, use real maple syrup to make this! I know it sounds snobby and like I’ve become too Canadian now but I’m serious. Using table syrup will just make the soup taste like pure sugar with none of that tasty maple flavor. Trust me, it’s worth the extra money!
