Black Bean Shepherd’s Pie

Black beans, carrots, white mushrooms, potatoes, Tex-Mex seasoning, tomato paste, marble cheese

 

Shepherd’s pie is easily one of my favorite cold weather meals. It’s hearty, warm, and filling and not too bad for you either! This vegetarian  version is a fun take on the original. With taco-seasoned black beans gave a little zip of flavor to a dish that can otherwise be sort of bland. The beans offer lots of protein and a texture that will make you not even miss the meat.

I sort of just threw this dish together so I’m glad it came out so tasty! It doesn’t look like much in the photo but it was delicious and down right comforting, perfect for a cold winter’s day. Next time I make this I might use sweet potatoes on top. Sweet potatoes and black beans, especially when seasoned this way, taste soooo yummy together!
