Chicken and Veggie Soup

Chicken breast, chicken broth, broccoli, carrots, spinach, cauliflower, sweet potatoes, thyme, paprika, garlic plus seasoning, salt, pepper

Chicken noodle soup is a warm, comforting winter favorite. But what to do when you are trying to eat healthy? With just chicken, noodles, broth, and some sad chunks of carrot, regular chicken noodle soup isn’t the best for you. That’s why this recipe is a great alternative.  It replaces starchy noodles with a nutritious array of veggies and I also used low-sodium chicken broth to try to cut down on the salt.

This soup also features sweet potatoes, which is both weird and amazing. It seems like a strange addition, but it totally works. The texture and flavor go great with the other veggies and the chicken, giving the soup a sweeter taste instead of a “vegetable-y” one. Though it isn’t very flashy or exciting, this soup is a definite must-have in your winter soup arsenal!
