Sweet Potato Shepard’s Pie

Sweet potatoes, ground turkey, Montreal steak spice, carrots, corn, lima beans, peas, green beans, pepper jack  cheese

 

Shepard’s pie is one of my favorite comfort food meals. It is warm, hearty, and pretty healthy all things considered. It also makes great leftovers for the next day. This version is an interesting twist on the classic thanks to trendy ingredient substitutions.

The sweet potatoes act not only as a starch but also add flavor and lots of nutrients. Replacing ground beef with turkey  doesn’t change the taste much but is a lot leaner and ensures the shepard’s pie doesn’t get greasy. My favorite change was using pepper jack in place of cheddar cheese on top. It added a spicy kick to a dish that can sometimes taste bland, plus the pepper specks look so cool in a photo!
