Twice-baked Chicken Fajita Sweet Potatoes

Sweet potatoes, chicken breast, Tex-Mex seasoning, black beans, red and orange bell peppers

Of all the stuffed vegetables I have made, these were on. freaking. point. Who would have thought to put chicken fajitas INSIDE A SWEET POTATO?! But it works. The sweet potato helps cut down the spice and adds a depth of flavor. Because this dish has two sources of protein, chicken and beans, it is very filling. Eating the serving shown above was plenty for me!

These sweet potatoes are easy to make but pretty time-consuming. Only make them on the weekends or some other day you have lots of time to prep and cook. Cooking the sweets, veggies, and chicken fully, combining everything, and baking it all together takes quite awhile, especially if you are a slow poke like me. Luckily they taste great enough to be worth the time and effort!
