Caesar Chicken Fingers
Chicken breast, breadcrumbs, Caesar dressing
These chicken fingers are so creative and gosh-darn delicious. To make them, dredge the chicken tenderloins or pieces in Caesar dressing instead of eggs, then roll in bread crumbs (they can be plain or seasoned) and bake. They come out so infused with flavor they don’t even need a dipping sauce! The dressing also keeps the chicken breast moist during the baking process. For a fast and flavorful dinner, these chicken fingers fit the bill.
I served ours with fresh kale and a yummy pasta salad to round out the meal. You could eat them alone for lunch or pair them with your favorite steamed veggies, too! Rolling these up into a wrap is another great lunch idea.
