I wish that this had photographed half as good as it tasted because that would be my most amazing photo yet. This dish was FRIGGIN’ AWESOME! I like shepard’s pie a lot and thought I would finally bite the bullet and give this low-carb version a try. Mashed potatoes have always been one of my favorite foods, so replacing them with cauliflower seemed close to sacrilege in my mind. But I decided to try it anyway and boy am I glad I did.
The cauliflower topping was honestly yummier than mashed potatoes to me. I know, right?! The texture was super similar to potatoes and with the cheese mixed in, it tasted delicious. Plus the cauliflower didn’t give me that overly full, heavy feeling in my stomach that I always get when I eat a lot of potatoes. They were rich and light at the same time.
This amazing dish is also really filling, so I’m excited to make it again as the weather gets colder and my instincts tell me to pack on the pounds. With lean meat and tons of veggies, your tummy and body will be happy thanks to all the fiber and vitamins. 11/10 will nom again!
