Lentil and Smoked Sausage Soup

Green lentils, smoked Polish sausages, carrots, kale, garlic plus seasoning, chicken broth

This hearty soup was the surprise hit of the week! I wanted to make a warm, filling dinner for a Sunday night and this recipe seemed like the perfect fit. It had veggies and lentils for me and sausages for my fiance. Win win!

If you love using your slow cooker, this recipe is perfect for it. Just slice up your carrots and sausages and throw them into the pot with your lentils, broth and seasoning. Then let it cook away all day and fill your house with yummy smells! Throw the kale in a short while before serving the soup for perfectly wilted greens. You could probably add other veggies to this too, depending on your taste.

This soup was sooooo yummy, but one word of warning: it is SALTY. The broth and smoked sausages (basically glorified hot dogs) combined means a very high salt content. I even used low sodium broth but that did little to help. This obviously made the soup taste delicious but definitely don’t add any extra salt and if you are seriously watching your sodium intake, I would reconsider making this dish.
