Yum yum yum! These chicken breasts were so delicious, I’m salivating just looking at them again now. They are tasty as can be, couldn’t be easier to make, and are pretty darn healthy for you too. Plus that bubbly brown cheese is irresistible 😉
Stuffing chicken breasts with cheese slices is such a genius idea. Trying to get shreds of cheese in there is nigh impossible, but fold a cheese slice in half and it nestles down in there nicely. Top that off with some spinach leaves and a glob of pesto and voila! Flavorful, healthy dinner. My fiance and I worked as a team on this dinner to get it done even faster because we were off to pub trivia that night. This is a quick and filling dish perfect for throwing together before you rush off to an evening engagement.
One of the best things about this recipe is that you can mix and match ingredients with the same yummy results. Don’t like provolone? Try cheddar or pepper jack. Have a beef with basil pesto? Make your own out of other herbs or greens for a flavorful spread you will love. You could even swap out the spinach for another green leafy veggie like kale or arugula if that’s your thing.
