Hearty Minestrone Soup

Garlic and olive oil diced tomatoes, rotini pasta, broth, thyme, garlic plus seasoning, six bean medley, peas, Lima beans, green beans, carrots, corn

This soup kind of ended up as a bowl of beans and vegetables, but I like it that way! The broth to veggie ratio was way off for some reason but because I love me a chunky, thick soup, I loved it! This recipe was packed with tons of different colors, flavors, and textures, which meant a lot of different nutrients, hooray!

You could probably use any mixture of veggies that you like to make this soup. I leaned towards this more “traditional” medley of lima beans, green beans, corn, peas, and carrots. They all were soft without being mushy and each component added a unique flavor to the soup.

I love that this soup tastes like a comfort food but is still really nutritious. The pasta adds some comforting carbs and it tastes warm and homey, like something your mom or grandma used to make. Yet the slew of vegetables give you  lots of vitamins. So your body, mind, and soul all feel amazing and satisfied. Who could ask for more?
