Pizza Quinoa Stuffed Peppers

As you might be able to tell, I have recently become fascinated with stuffed peppers. Sure, the regular ones with beef and rice are obviously delicious, but there are so many more things you can stuff inside a bell pepper! Endless things! So I set out on Pinterest to find some unique recipes and was super excited when I came across this one.
I have to say, it didn’t really taste like pizza, but this recipe was pretty darn tasty! The ooey gooey cheese and garlicky tomato sauce were a delicious contrast to the sweet red bell peppers. Served with garlic bread, this was the perfect healthier take on an Italian restaurant dinner.
As is the case with most quinoa dishes, these were also super simple to prepare. You just cook the quinoa, mix in the “pizza” ingredients, spoon it into the peppers, and bake for a bit. This would be a great dinner for days when you don’t have much time or energy but want a filling meal rich in protein and vitamins.
