Southwest Chicken Soup

Chicken breast, black beans, corn, broth, Tex-Mex seasoning, salsa

 

This zesty soup was a fun fiesta! It was chock-full of delicious and nutritious ingredients. With all the meat, corn, and beans, this soup was packed with lots of protein and fiber to keep you full and energized long after meal time. That’s why it made such a good leftover lunch: it kept the 3 o’clock slump at bay!

I really like using salsa instead of regular old diced tomatoes for this recipe. It was spicier and had a better variety of veggies than a can of plain tomatoes. Plus it cleared something out of my fridge that may otherwise have gone to waste!

My only recommendation is to maybe use a little less chicken than I used. It was nice to have such a hearty and filling soup with a great broth to ingredient ratio, but there was almost too much. At times it felt more like a watery burrito bowl than a chicken soup.
