The original version of this recipe was a hearty broccoli and potato casserole that would be perfect as a heavy side for a winter feast. I loved the sound of the recipe, but I wanted to make a whole meal of it. The solution came in the form of some leftover honey garlic sausages. Yum! They were just hanging out in my freezer, waiting to be eaten. The result was the ultimate comfort food casserole!

I would never have thought to put this combo of ingredients together. It’s like Shepard’s pie but even better! The thick, cheesy mashed potatoes fill you up while the meat adds flavor and protein and the broccoli gives the dish color and some veg.

My favorite part, though, was the crunchy topping! The original calls for corn flakes, which would have been great, but I took it a slightly different direction with Wheat Thin crackers. We used them as a topping on another casserole and they added so much texture and flavor I had to seize this opportunity to use them again!
