Falafel Buddha Bowls

Falafel mix, sweet potatoes, cauliflower, olive oil, salt, creamy garlic sauce

Okay, okay. I realize that this dish isn’t exactly, completely homemade. But it still took some work so I’m gonna list it here! It’s a fun vegetarian meal that’s as healthy as it is delicious! Ours was a little less healthy than it could have been since we used garlic pizza crust dip instead of homemade tahini sauce, but I honestly don’t regret that sinful alternative 😉

I love falafel so much but because it’s usually fried, it can be greasy and not so good for you. Luckily, this recipe has us bake the falafel to cut out the fat. The patties didn’t come out any drier than a normal, fried falafel, and the sauce added some moisture too. I’m lazy and don’t want to buy a bunch of random spices so I used a boxed falafel mix, but you could easily make your own homemade batter for this recipe.

Adding sweet potatoes and cauliflower to falafel seemed like a random choice at first, but they tasted awesome together! Plus those are two of my favorite veggies, so double win! This healthy dish is so tasty and has lots of nutrients, so fill your bowl as full as Buddha’s belly!
