Thank you lawd for this wonderful casserole (insert hearts for eyes emoji here). This tasted so good and the rice made it filling enough for a meal. My fiance loved it so much he almost couldn’t wait to eat the leftovers for lunch the next day!
I really liked the taste the ground turkey gave this dish. I think beef would’ve been too greasy and overpowering, but the turkey tasted light and allowed the veggie flavors to shine through. Topping each bowl with cheese also added a creamy touch, which was a good foil to the acidic pepper and tomatoes.
My only advice is to precook your rice beforehand (like the day before) or use minute brown rice. The long-grain brown rice I use takes at least half an hour to cook so if I’m not on top of the time, we can end up eating dinner super late. Waiting around on the rice can be a super pain in the butt, but it was honestly worth it for this tasty meal!
