Baked Chicken Chimis

Ok I honestly don’t know the all the differences between different Mexican foods so I’m just calling these what the original poster called them. Are they burritos, chimichangas, flautas, taquitos??? Whatever they are, these were ON POINT.
I’ll admit right off the bat that this dish isn’t one of the healthiest. The refried beans and cheese have a lot of fat and the tortillas are carbs. But it does have protein from the chicken and beans, plus good fats from the avocado, so it’s not all bad! Besides, every meal I make isn’t going to be all quinoa and veggies. I love those dishes but I also love to mix it up with other flavours and cuisines.
Dipping these in salsa (or sour cream if you can stomach it) is such a yummy addition. It adds another layer of flavour(s), plus who doesn’t love to dip stuff? I would have never thought to put refried beans with avocado but the flavours worked really well together. The spiciness of the beans and cheese played against the signature avocado taste for a flavour explosion!
