Chicken Avocado Pizza

This delectable pizza was made for me by my sweetie pie fiance on his cooking day. He’s in LOVE with both avocados and pizza, so finding a way to combine them pretty much blew his mind. I was happy that he found a pizza with pesto, since it’s one of those foods I could eat every day and never get tired of. The bright, herby, garlicky flavours of the pesto are a delicious counter to the fatty avocado. This dish was super duper easy to make since we used pre-made pizza crust. Just cook the chicken, slap everything on top of the crust, and bake!
For a pizza, this dinner is actually pretty good for you. The chicken is a lean source of protein and the avocado is full of healthy fats. Plus pesto is way less likely to have added sugars than store-bought red sauce. You could make it even healthier by using low-fat or vegan cheese, adding more veggies, or making a cauliflower crust. Just don’t eat this one before you meet up with people; it’ll give you dragon breath something fierce 😉
