Meatballs and Veggies with Tortellini

Arrabbiata tortellini, button mushrooms, spinach, tomato sauce, ground chicken, egg, breadcrumbs, garlic plus seasoning


Yummy yummy in my tummy! We’ve eaten this variety of store-bought tortellini before and they’re a definite favourite. The filling is a slightly spicy paste made of tomatoes and some variety of hot pepper. They pair perfectly with tomato sauce and cook up super fast!

I was inspired by a recipe I found that was just frozen meatballs and frozen pasta smothered in sauce. What fun is that? Instead, I got fresh pasta, my fiance made big ol’ chicken meatballs, and I chopped up some mushrooms and spinach that we had lying around. You could really use any meat for the meatballs and any veggies you had in the house. Some diced peppers or eggplant would add a lot to this meal! It’s so versatile because there’s literally no recipe, just an idea. Pasta, meat (or meatless) balls, and vegetables, any kinds you like.

This dish isn’t the most creative one I’ve made but it was quick and easy and was a great way to clean out some of the contents of my fridge. It was a great weekend dinner because it was really hearty but didn’t require a lot of work on what’s supposed to be a day off. Working as a team with somebody you love makes it even faster and more fun 🙂
