Quinoa Breakfast Bowl

Of all the yummy and easy recipes I’ve made, this dish is one of the yummiest and easiest! All you do is cook the quinoa, scramble the eggs, throw some salsa and cheese on top and mix it all together in a bowl! This dish was fast to prepare, packed with protein, and had a bit of a kick to wake up those taste buds.   Even though I NEVER make myself a hot breakfast, I’m almost tempted to get up a half-hour early to make this delicious bowl!

One of the best parts about this quinoa bowl is that it’s easy to adjust the recipe to different amounts of servings. Just up the quinoa by a half cup per person, add a few more eggs, and boom: you can make anything from a solo breakfast to an entire brunch party. This dish, like most of the quinoa-based recipes I’ve tried, makes amazing leftovers that warm up perfectly, so feel free to make more than you need and just pop some in the microwave for an even easier breakfast the second day!

The original recipe calls for some avocado to top off this dish, but that’s not really my style. Important tip: I used extra-chunky salsa to make this so there were lots of big, spicy tomato and onion chunks and very little juice to make the quinoa soggy.
