Italian Sausage, Beans, and Rice
Hot Italian sausage, brown rice, white beans, salt, pepper, garlic and olive oil diced tomatoes

If I could only eat 10 things for the rest of my life, this dish would be included on that list. What. The. Heck. The spicy sausage melded with the acidic tomatoes, and both flavours soaked into the beans and rice and it was just so GOOD! It was also one of those lucky dishes that warmed up well as leftovers. Yum.
The original recipe was for a soup but on the day I made this, I just wasn’t feeling that. I wanted something more hearty and filling so I threw some rice in for the last hour of slow-cooking. Best idea I’ve had. The rice absorbed the tomato juice so the dish wasn’t watery, plus it helped balance some of the sausages’ spice. Even though the perfect combo of hot sausage and white beans doesn’t need anything added to it, the rice raised this dish from a 9.5 to a 10.
I wish I had more to say, but you’ll just have to try it for yourself! I’m really on a beans-and-sausage kick these days because it’s delicious and filling for this cold winter weather! Plus, this dish is made in the crockpot, so no slaving away in the kitchen all night to get a yummy dinner. Will make again, approximately 1,000,000 times!
