This was a good but ultimately weird recipe. Using hunks of bread as a sort of crust didn’t work at all. Instead, the eggs mostly soaked into the bread, making the dish into a sort of extra toasty, savoury French toast. Not to say that it was bad, because who doesn’t like French toast? The veggies also stayed crunchy and added flavour to boring old toast and eggs.
Mediocrity was the name of the game with this dish. It was good but I’ve made many better breakfast recipes. It also took kind of a lot of work in comparison to how much we enjoyed eating it. I don’t even have a fun (or not-so-fun) anecdote about making it! Everything about this dinner from start to finish was just fine. If you’re really desperate for something different than you’ve ever had before, try this one. If not, I’d go for another, more worthy recipe for breakkie.
