This crazy concoction was soooo delish! Who would think to combine sweet potatoes, red potatoes, sausage, and eggs? This was hands-down the easiest casserole to serve of all that I’ve made; the eggs bound everything together into lumps of yumminess. Whether day or night, breakfast or dinner, this is a definite crowd pleaser.

Of course this took me way longer to make than it should (my chopping and peeling skills still need to be honed) but the end result were so worth it. Dirty secret: we actually ate this entire thing in one sitting! Make sure to use really flavourful cheese and sausage to make this extra tasty (I used a cheese blend and a slightly spicy sausage).
