Oh pesto, my darling. I was afraid to try you for so many years and now am a little obsessed, always choosing your deliciousness over assurance there is nothing green in my teeth and I have fresh breath.
This recipe was one of the easiest to make with the most flavourful results. Putting the pesto in the bottom of the baking dish as well as on top of the chicken kept them incredibly juicy, though finding my meat swimming in a pool of oil upon taking it out of the oven was a little alarming.
